As created by the rather talented Heston Blumenthal for Dinner, the meat fruit is a thing of wonder.  Its simple form belies the complexity of its creation.  A perfect ball of smooth chicken liver parfait is dipped into a clementine puree, creating a dish of contrasts – the rich parfait and the ever-so-slightly bitter fruit.  Served with our own griddled sourdough, absolutely delicious, and rather pretty too.
